How does one join multi-part .dmg files to one big .dmg file? Is it done within Disk Utility (I don't seem to be able to find that information in its Help section)?

Normally you dont need to. Once you open the first part , it will open the rest automatically as if it was one file.

After mounting the diskimage, select the disk in diskutility and select new image. This will create a new image from the multipart image.
